Is there something you can do to the Samsung Galaxy S to make it jailbroken like the Ipod Touch can? I learned about something called rooting it, but it doesn't seem to offer all the neat things like free apps and what not.
Galaxy S phones run android. Jailbreaking is the term for gaining admin access to the device for Apple products, and ROOTING is basically the same thing for Android phones. The major difference is that stock Android is a lot more open than iOS is, and to run apps that aren't from the app store on apple products you have to jailbreak, which you do not for Android.
If all you are interested in are free apps, which it sounds like, then just download apps onto your memory card and install them. If you want to run different firmwares and get other roms and stuff like beta testing things from XDA Developers/test your own stuff on your android phone, then you should ROOT it.
