    this is a stupid question ... but is there a special packet editor we should use or is wpe fine.

    the bit-endianees is an insignificant matter that can be resolved several ways.
    as for the attempting to edit the sent/recv data, it's really great method you posted down here.
    there's also ways of figuring out how to know what're the opcodes [Operation Codes] are for, which requires a knowledge of Assembly and Reversing Background.

    The conclusion is, this is an advanced rather great introduction to Packet Editing.
